The Maybourne Bar at The Maybourne Beverly Hills Transforms into the 90210’s First Caviar and Oyster Bar in Partnership with N25 Caviar

BEVERLY HILLS, CA (September 2025) - On the heels of its coveted Alinea Beverly Hills immersive dining experience with the three-Michelin Star Chef Grant Achatz, The Maybourne Beverly Hills once again ups the culinary ante in 90210 with the debut of a new Caviar and Oyster Bar concept in one of its most intimate and stylish spaces, The Maybourne Bar, on September 18, 2025. 

Anchored by a hand-crafted creme and tan marble bar with five blue stools, the dimly lit lobby-adjanent bar has always oozed with elegant sophistication and relaxed indulgence. Now, with the arrival of N25 Caviar, the space transforms into Beverly Hills’ only dedicated caviar and oyster bar concept and the first bar or restaurant in California offering the globally acclaimed caviar, renowned for its aging process, precise practices, and German craftsmanship. Under the expert guidance of The Maybourne Beverly Hills’ Executive Chef, Damon Gordan, the partnership will debut with an omakase-style Caviar and Oyster tasting experience, an intimate Caviar Masterclasses led by N25 Founder, Hermes Gehnen, and a Caviar, Oyster, and Billecart-Salmon Dinner in the hotel’s stunning Chef’s Table space. 

“The Maybourne Beverly Hills is dedicated to bringing world-class dining experiences to guests and locals alike. After the resounding success of Alinea Beverly Hills, we wanted to follow up with yet another of-the-moment experience designed to satisfy the most discerning palates,” said Executive Chef Damon Gordon. “When it occurred to us that Beverly Hills didn’t currently have a dedicated caviar or oyster bar experience, our mission became clear: search for a world-class caviar purveyor that would take guests on a truly singular culinary journey and experience this delicacy in a new way that’s wholly Maybourne.”

This launched a two month exploratory journey, where Chef Gordon and his team tasted over 12 of the finest caviars from around the world, with N25 becoming the natural choice for the new concept at The Maybourne Bar. Leveraging the unique terroir of high-altitude mountains, natural mountain water, optimal climate, and the innovation of their aquaculture facilities in China, N25 caviar then undergoes a unique aging process in Germany, defined by complex umami flavor profiles with refined subtlety. The resulting caviar is subjected to rigorous visual and sensory quality control by the brand's caviar masters, who adhere to the strictest selection criteria, with only 10% of the harvest earning the prestigious N25 label. 

“Caviar is an industry steeped in tradition, but at N25 we bring a modern evolution through our unique aging process, which creates complex aromas and elegant flavors,” said N25 Founder, Hermes Gehnen. “That same balance of tradition and modernity is what makes The Maybourne Beverly Hills so special. Together, we’re inviting guests to experience N25 in a more personal way and discover the craftsmanship behind the caviar enjoyed by Michelin-starred chefs around the world.”

The tasting menu experience introduces a bespoke caviar snack menu available during all bar hours; a curated journey from savoury to sweet, alongside a destination-worthy oyster and caviar offering. Highlights from the menu include: Truffled Deviled Egg – a classic redefined with truffle essence and hybrid N25 Caviar; Compressed Watermelon – brightened with vodka, powdered lime, and hybrid N25 Caviar; Schrenkii N25 Caviar Burger – seasoned salmon with horseradish and apple remoulade; and Vanilla Ice Cream with Sea Salt, Olive Oil & hybrid N25 Caviar – a playful finale balancing sweet and savory.  Additionally, a curated à la carte oyster menu complements the tasting menu omakase, featuring freshly shucked Eastern and Pacific oysters in preparations such as “En Gelée” with sake and green apple, and a refined “Rockefeller” with confit fennel, creamed spinach, and aged parmesan.

The Maybourne Bar will also host an intimate, ticketed caviar masterclass, led by Hermes Gehnen, Founder and Managing Director of N25 Caviar on Thursday, September 18 at 6 pm. The seven guest experience will explore the science, tradition, and craftsmanship behind N25’s signature aging process, paired with snacks from Chef Damon and a flight of Billecart-Salmon Champagne - Maybourne’s new brand-wide champagne partner - available for $175 per person and bookable here. 

The following evening, on Friday, September 19, guests can partake in the ultimate expression of the new Caviar and Oyster Bar concept - an exclusive Caviar, Oyster, and Billecart-Salmon Dinner held in The Maybourne Beverly Hills’ intimate Chef’s Table. Clément Calleja, Director USA of Champagne Billecart-Salmon, will pair his finest champagnes with a selection of N25 caviars and oysters flown fresh from both east and west coast chosen and specifically paired with seven-course, gastronomic experience priced at $350 per person and bookable here. 

The hotel will also debut a custom-designed caviar cart and a dedicated selection of N25 caviars, offering bespoke caviar butler services, available for weddings, meetings, and other celebratory events.
