Having grown up in Toulouse surrounded by fruit trees, Nicolas Rouzaud developed an early understanding that fruit should be picked only when perfectly ripe, never before, never after. That philosophy continues to shape his approach to patisserie today and lies at the heart of this year’s Easter centrepiece.
Crafted from rich dark chocolate, the egg consists of a chocolate crumble layered with soft caramel and hazelnut praliné creating a balance of depth, sweetness and crunch.

Our beloved Connaught hound, proudly adorning the hotel emblem, is reimagined as a chocolate hazelnut cake. This miniature work of art will be a patisserie signature, available to take away or feast on at the Patisserie.

Nicolas Rouzaud presents his latest masterpiece—a refined take on a classic. The Trio au Chocolat, with its signature stripes, showcases dark, white, and gianduja Valrhona chocolate.
