abc kitchens launches at The Emory

Jean-Georges Vongerichten’s abc kitchens has opened at The Emory, London, uniting his acclaimed trio of restaurants under one roof, offering seasonal, ingredient-led cuisine in a stunning architectural setting.

abc kitchens has opened at The Emory in Belgravia, the newest restaurant by acclaimed French Chef Jean-Georges Vongerichten. A modern architectural masterpiece designed by the late Richard Rogers and Ivan Harbour, The Emory is London’s first all-suite hotel and the latest opening by Maybourne, operator of Claridge’s, The Connaught and The Berkeley, and other international, prestigious outposts.

abc kitchens is the exclusive UK restaurant of Vongerichten’s celebrated trilogy from New York – abc kitchen, abcV and abc cocina - all sitting under one roof for the very first time. Vongerichten’s original abc kitchen has proudly been a stalwart of New York’s dining scene since 2010. Though the three restaurants showcase different culinary offerings (farm-to-table fare, plant-based, and Latin-inspired, respectively), they share the same philosophy: a passionate commitment to fresh, organic, sustainable, and ethically sourced local produce.

Vongerichten’s cuisine abandons the traditional use of meat stocks and creams and instead features the intense flavours and textures from vegetable juices, fruit essences, light broths, and herbal vinaigrettes. abc kitchens’ menu reflects this approach and showcases Vongerichten’s creative and forward-thinking, plant-focused dishes, tonics, and cocktails, celebrating the best of mother nature.

abc kitchens presents ingredient-led menus focusing on seasonality, with a supplier-specific approach to sourcing the finest quality food. Highlights include The Wild Room, famous for providing exotic and wild foraged foods, Portland Shellfish, based in Dorset, UK, renowned for its exceptional quality British seafood; and Ren's Pantry, specialising in high-quality spices and ingredients, among many others.

Highlights from the versatile menu include Dorset Crab Toast with green chilli, dill and lemon aioli and Jean-Georges’ famous Pea Guacamole with sunflower seeds, green chilli and warm crunchy tortillas from the snacks section, and a colourful Heirloom Beet Carpaccio with avocado purée and flavours of tartare from the light and bright section.  

From the vegetarian section, highlights include Whole Roasted Cauliflower served with turmeric-tahini, red zhug, pistachio, and date molasses and White Asparagus with fresh herbs, Amalfi lemon and sunchoke ‘hollandaise’.

From the seafood and meat sections, signature dishes include Crispy Dover Sole Tacos served with aioli and cabbage-apple slaw, Grilled Octopus served with smoked paprika crème fraiche and guajillo vinaigrette, and Char-Grilled Beef Tenderloin served with chimichurri and lime.

The drinks menu has been created to complement the food, with a market availability approach to ingredients. Highlights include a Ginger Margarita and a Cucumber Martini as well as a Pea and Herb Martini. The menu also features a selection of healthy and non-alcoholic tonics, with flavours ranging from turmeric and ginger to lemon and sea buckthorn.

Commenting on the opening of abc kitchens in the UK, Vongerichten said, “It is a great privilege to have the opportunity to bring all three of the abc restaurants to London under one roof for the first time at The Emory. abc kitchens will continue to offer unique experiences that pay tribute to the original three abc’s in New York (abc kitchen, abcV and abc cocina), but that will be ignited and inspired by local suppliers and their high quality, seasonal ingredients.”

Overseeing the menu under Vongerichten’s stewardship is Executive Head Chef Ben Boeynaems. After working in some of London’s most distinguished kitchens for the likes Gordon Ramsey and Eric Chavot, including most recently at The Beamont Hotel, Ben brings a refined yet approachable style of classical cookery. Mike Walker is at the helm as Restaurant General Manager after a 10-year career operating leading bars and restaurants, across the capital and further afield.

The interiors of abc kitchens at The Emory have been designed by the renowned Rémi Tessier and play on the progressive architectural spirit of the building and its pared-down aesthetic. Rich and high-quality materials meet comfortable furnishings to complement the striking glass façade of the building which overlooks Hyde Park, with a dining space that feels both fresh and familiar. Warm wood tones and a colossal Rosso Orobico marble block set the stage for a comfortable dining experience, while a 12-metre snaking couch adds a statement feature. The 'wine cave' fixture, an amber glass masterpiece, serves as an oversized glowing lantern housing a curated selection of wines. Guests can dine amongst a series of artworks called ‘The Secret Gardens Paintings’ by Damien Hirst, adding vibrant colour to the overall decoration. The restaurant also offers an intimate private dining room ‘The Market Table’ seating up to 10 guests, nestled next to the heart of the kitchen with a view of the pass and dining room.

Alongside abc kitchens, and also on the ground floor, is The Emory Bar with access to a covered courtyard garden featuring a large-scale stained glass artwork by Brian Clarke. The bar includes a separate menu of drinks, snacks and small plates.
