We are seeking an exceptional Head Pastry Chef to join the Claridge’s team.

The Pastry Kitchen is responsible for the preparation and service of food within the Foyer and Reading Room, In Room Dining and our luxury event space, catering for around 1000 people per day. Seasonal ingredients and locally sourced produce are the hallmarks of our dining menus. Simply delicious, and deliciously simple.

Main duties & responsibilities

As Head Pastry Chef, you will lead a creative and dynamic team, who are responsible for the development and production of all pastry items at Claridge’s.You will be responsible for managing the daily operations, ensuring that recipes are followed perfectly, you will take pride in supporting and developing members of your Brigade, whilst perfecting your own skills to ensure continued innovations in our culinary offerings.

Main responsibilities of the role include but are not limited to:

  • To assist the Executive Pastry Chef in being responsible for the management of all pastry and bakery production to clients within the Hotel. To provide direction and supervision to all personnel deployed in the Pastry;
  • To supervise in the preparation of regular food items, daily specialities and other special functions (Banqueting);
  • To assist the Executive Pastry Chef in ordering of food purchases and stock control, ensuring that stock levels are in line with Company requirements;
  • Instructing briefing and supervising Chef de Partie and their brigade in their daily tasks, assist them in their preparation of food;
  • To maintain high levels of communication between Sous Chefs and Chef de Parties at all times, in particular ensuring special messages/requests are dealt with promptly;
  • Check all food deliveries for quality, quantity and maintain close liaison with Purchasing Department;
  • Prepare food requisitions in accordance with daily routine, taking into account advance planning, special bookings and staffing levels;
  • Participate in Supervising and preparation of all baked goods pastries and desserts in accordance with established recipes.

Entry Requirements

We are currently seeking an outstaying, creative individual to join our Kitchen Brigade as Head Pastry Chef.The successful candidate will be a highly skilled individual who is motivated by leading a team of Pastry Chefs and working as part of the wider Kitchen Brigade.We are looking for an applicant who thrives under pressure, is outgoing, flexible, well organised, and has excellent attention to detail.The ideal candidate will have knowledge of similar environments.
