Main duties & responsibilities

As a Pastry Sous Chef you will be responsible for the day to day supervision, preparation and service of the Pastry Kitchen and Bakery, ensuring that highest standards are maintained at all times and up to the standards required by The Berkeley. 

Main responsibilities of the role include but are not limited to:

  • Supervise in the preparation of regular food items, daily specialties and any other special functions.(Banqueting), menu items for the Collins Room, Room service, Bars and health club.
  • Assist the Executive Pastry Chef in the ordering of food purchases and stock controls, ensuring that stock levels are in line with Company requirements.
  • Instructing briefing and supervising the brigade in their daily tasks, assist them in their preparation of food.
  • Maintain high levels of communication between the senior Chefs and kitchen brigade at all times, in particular ensuring special messages / requests are dealt with promptly.
  • Check all food deliveries for quality, quantity and maintain close liaison with Purchasing Department.
  • Prepare food requisitions in accordance with daily routine, taking into account advance planning, special bookings and staffing levels.
